Name the first Zitadel org and admin through env vars

Add ZITADEL_ORG_NAME and ZITADEL_ADMIN_{FIRST,LAST,DISPLAY}_NAME (defaults
keep the previous ZITADEL naming for dev); the prod example uses
Iker Demo / admin@ikerdemo.cat.
